My Babka recipe also allows chocolate flavors to take center stage, with its gooey chocolate and hazelnut filling.     Very tasty and beautiful.
    I made the Mosaic individual roll cake out of this book, Pastry Collection by Karim Bourgi, and it made me look like a chef. I was intimidated by it but the recipe was easy to follow and the flavor is amazing. I'm excited to try the other recipes from this book.

    A book for pastry lovers
    This is an interesting book if you are interested in getting started in the world of pastry. It has lots of recipes with illustrations of the results inside and out that make it very appealing to start cooking.

    As a person who makes desserts, I would like to stress that if you are a novice cook, this may not be the book for you, as desserts require patience and much practice. It would also have been nice to have included some photos of creating the desserts.

    I received a free copy of this book and am leaving an honest opinion about it.

    Pastry Collection by Karim Bourgi
    The first recipe I tested was the Babka, it’s a favorite of mine and I was excited to try it with hazelnuts. The ingredients are readily available and the instructions are very clear and concise which resulted in a light and tasty babka that my family quickly devoured. As a pastry chef, I love exploring recipes. Of the many I’ve tested, half of them failed because of poor instructions or improper measurements. This babka recipe is perfection. Even the home cook could follow and have great success. While I would certainly say that this book is for the more advanced or professional chef, Chef Bourgi makes the recipes approachable for the novice chef. Its beautiful illustrations tempt you to give the recipes a try. I have only tested the babka and the chocolate eclairs due to time constraints; my family loved the babka and wants me to make another and my friends enjoyed the eclairs during a light tea service celebration. I am really looking forward to trying more of the sixteen generous recipes in this book; It’s five star, Chef Bourgi knows his craft and the beauty of the book alone is worth it but why not try a recipe or four, you will not be disappointed.
